A kitchen that remembers.
In 2011, Chef Aditi Holkar Rao began collecting handwritten recipe books from the families who once cooked for Indore's royal household. Many of the dishes had not been served in a restaurant for a century.
Today our kitchen cooks forty of them, from the smoked bhutte ka kees of the monsoon court to a rabdi that takes nine hours to reduce. Every spice is ground in the house, and the menu changes with the Malwa seasons.
